Easy Keto Chocolate Seed Nugget Ingredients

Coconut flakes - I used larger unsweetened coconut flakes that are sometimes referred to as "chips". However, since they were a little too large, I crushed them in my hand before adding them to the mix to make sure that they would not stick out from the keto nugget!

Pumpkin seeds - These can be raw or sprouted. I typically only use very lightly salted or no salt since I like to control the salt level. If you only have salted and roasted, do not add any additional salt.

Sunflower seeds - Again, any type of sunflower seed will work in this recipe. If you have raw sunflower seeds (you can do this with the raw pumpkin seeds as well), feel free to quickly toast them in a skillet (make sure to stir them constantly as they can burn very quickly!) until they begin to brown.

Sugar-free chocolate chips - Any sugar-free chocolate chips will work such as Thrive Market, Lily's or ChocZero.

Unsweetened Chocolate - By adding two squares of Ghiradelli 100% Unsweetened chocolate as well as 2 teaspoons of Black unsweetened cocoa powder, it helped to add the nice richness that you get in the Innofoods dark chocolate nuggets. Plus, these copycat keto dark chocolate nuggets won't melt on your fingers and can be stored at room temperature! If you do not have black cocoa powder, feel free to use any type of unsweetened cocoa powder you have on hand or omit this ingredient.

OPTIONAL - Maldon salt, unsweetened cocoa powder and vanilla - I added a splash of vanilla, 2 teaspoons of unsweetened cocoa powder and then sprinkled Maldon salt on top of each nugget to help round out the flavours. You can taste the no-bake sugar-free chocolate seeds after stirring all the ingredients together and then decide if you want to add anything (cinnamon or espresso powder would also make great additions!)

Instructions

This no-bake sugar-free nugget recipe is so simple! So grab your bowl and spoon and let's do this!

Place the sugar-free chocolate chips and the unsweetened 100% cocoa squares in a large microwaveable bowl.

Microwave on high for 1 minute and then stir until all the sugar-free chocolate has melted. Stir in the unsweetened cocoa powder and vanilla, if using.

Add the coconut, pumpkin seeds and sunflower seeds to the bowl and stir everything together, making sure to coat all the seeds and the coconut.

Line a baking sheet with parchment paper and drop tablespoons of the mixture onto the sheet. Allow the nuggets to firm at room temperature or in the fridge.

Feel free to sprinkle the chocolate nuggets with a little Maldon or another type of salt.

Hint: Be careful when microwaving chocolate as it can seize. Once the chocolate begins to melt, all you have to do is vigorously stir the chocolate until it fully melts. If you can not get it all to melt, simply microwave it for an additional 15 seconds.

Substitutions and Variations

One of the things that I love best about this copycat recipe is just how easy it is to create different versions depending on what seeds or nuts you have on hand. Also, you can make more copycat recipes. Here are some of the other Innofoods Dark Chocolate Nugget flavours

  • Almond Cranberry - replace the pumpkin seeds with sliced almonds and add some sugar-free dried cranberries.
  • Maple Almond Cashew- replace the pumpkin seeds and the coconut with sliced almonds and cashews. Add about 1 tablespoon of sugar-free maple syrup and use white sugar-free chocolate instead of dark sugar-free chocolate
  • Cinnamon - use all the same amount of coconut, pumpkin seeds and sunflower seeds but add some sugar-free brown sweetener and cinnamon to the mix. I would also use white sugar-free chocolate instead of dark chocolate.

Ingredients

  • ½ cup coconut chips, crushed by hand into smaller pieces
  • ½ cup sprouted pumpkin seeds
  • ½ cup roasted unsalted sunflower seeds
  • 1 cup sugar-free chocolate chips
  • 2 squares (28 g) 100 % unsweetened Ghiradelli chocolate, chopped
  • 1 tsp Maldon salt
  • Optional - 2 teaspoon unsweetened cocoa powder and 1 teaspoon vanilla

Instructions

  1. In a large microwaveable bowl, add the sugar-free chocolate chips and squares. Microwave on "high" for 1 minute. Stir until all the chocolate has melted (this may take over 1 minute. If the chocolate has not melted after 1 minute of stirring, place it back in the microwave at 15-second intervals, stirring after each interval, until all the chocolate has melted.
  2. Stir in the unsweetened cocoa powder and vanilla, if using. Stir in the pumpkin seeds, sunflower seeds and crushed coconut chips. Stir until all the seeds and coconut have been covered in chocolate.
  3. Using a 1 tablespoon cookie scoop (or just use a spoon), dollop the mixture onto a parchment-lined baking sheet. Sprinkle with Maldon or another salt if desired.
  4. Allow the chocolate to firm at room temperature (anywhere from 2-4 hours depending on the temperature of your home.)

FAQs

What size bowl should I use?

You want to use a fairly large bowl. By using a large bowl, the chocolate tends to melt more evenly and it is easier to really get all the coconut, pumpkin and sunflower seeds covered.

Do I have to make these into nuggets?

You can actually spread the mixture into a parchment-lined tray and press it together and then break it apart into sections. I like using the cookie scoop as it makes sure that each bite has the same nutritional value.

Can I use roasted and salted seeds?

I have only tried this recipe with raw seeds and am unsure of how they would turn out if you use roasted seeds but I think they should turn out just fine. I just wouldn't use seeds that were really salty as it may be too salty in the end.

How should these easy keto chocolate seed nuggets be stored?

If your house is not too warm, you can store these nuggets in an airtight container at room temperature for up to 2 weeks. You can also store them in the fridge for 4 weeks and in the freezer for 3 months.

Can I use shredded coconut instead of coconut chips?

I don't see why not!

Since this keto chocolate does not melt, does that mean it is tempered?

This is a "cheater" way to temper sugar-free chocolate. By adding in 100 % unsweetened baking chocolate as well as some unsweetened cocoa powder, the chocolate becomes stabilized enough to handle it without it melting or having to be refrigerated.

Can I make these sweeter?

These keto seed clusters are not overly sweet (I would compare their sweetness to 60% dark chocolate) but if you want sweeter seed clusters, simply add 1 tablespoon of powdered sugar substitute (such as Swerve or Allulose) into the melted chocolate.
